Tank 7 Smoked Queso Dip

The best beer snack known to humankind is queso dip so it’s only logical we pair it up with the best beer snack beer known to humankind: Tank 7. The creamy and spicy flavors are taken to the next level when we smoke the dip on our smoker. We prefer cherry or hickory wood and like to go heavy on the smoke since the dip will only be in the smoker for an hour.

Ingredients

2 pounds of cubed Velveeta

1 pound of cubed Colby Jack (or Pepper Jack if you like it spicier!)

1 pound of chorizo, cooked

1 can cream of onion soup

2 cans Rotel

2tbsp BBQ or taco seasoning

¼ cup of Tank 7

½ cup of chopped cilantro plus more for garnish

Chips for serving

Cooking Instructions 

Prepare your smoker or grill to cook indirect at 350 degrees. 

In a 14-inch foil baking pan combine the Velveeta, Colby Jack, chorizo, cream of onion soup, Rotel, spices and Tank 7. Smoke for one hour, stirring every 15 minutes. Add cilantro about five minutes before you remove from the smoker. Remove from the smoker and garnish with more cilantro. Serve with chips and more Tank 7.
