Quirk Cake
Quirk Strawberry Lemon & Basil is one of our most popular flavors, and it just so happens to be the perfect flavor for Spring.
So why not make it into an old-fashioned soda cake like the kind your grandma used to make? Those cakes were sweet because of all the sugar in soda, but since Quirks are low in sugar (<1g) this cake isn’t super sweet. We’d recommend adding a light icing to the top to up the sweetness and pump up the lemon.
Cake
One box of Strawberry Cake mix
One 12oz can of Quirk Strawberry Lemon & Basil
Icing
½ powdered sugar
Juice of half a lemon
1 tbsp of lemon zest
1 tbsp of milk or water
Garnish:
(optional) Fresh strawberries and basil
*soda cake is dense and sticky. You can prepare it in different shapes of pans but don’t try to layer this cake. A Bundt cake pan, a 9×13, or cupcake tins would be best. Coat any pan you use very well with butter and flour to ensure easy removal. (or cooking spray on paper if you’re making cupcakes)
Instructions
- Preheat oven to 350 degrees.
- Add your box of cake mix and the entire can of Quirk to the mixer, and whisk for one minute on low and two on medium.
- Pour dough into prepped pan and bake for 30 mins.
- (if using a bundt pan) let cool for 5 minutes before turning out onto your serving dish to finish cooling.
- The icing. In a medium-sized bowl, whisk together icing ingredients until they are smooth. You want the icing to slowly run off the whisk, not too thick and not too watery.
- Once your cake is cooled add the icing and garnish!
Cool completely before slicing and enjoying. We’d also recommend you serve it with a Quirk Strawberry Lemon & Basil!
